Guacamole

Ingredients:

  • 2-3 ripe avocados
  • 1-2 Serrano peppers depending on your preference for heat.
  • 1-2 small tomatoes (I like Camparis), seeded and chopped
  • 1-2 tsp Sea salt
  • Juice of 1-2 limes
  • 2 Tbsp chopped fresh cilantro

A few notes on making this:

  • This is my go-to recipe for guacamole. I don’t like onions in guacamole, but feel free to add if you prefer them. I find that there is plenty of heat from the Serrano.
  • The measurements are approximate mostly because everyone prefers their guacamole slightly differently, and you may get a larger avocado and only need two instead of three.
  • Make sure to add plenty of lime so that the guacamole doesn’t turn brown.
  • This recipe works beautifully in a mortar and pestle if you have one, but it’s OK if you don’t. You can use a fork or muddler in a regular bowl.

Directions:

  • In a mortar, using a pestle, (or a bowl, using a muddler or fork) mash tomato, chilies and salt to form a coarse paste.
  • Add in lime juice.
  • Cut avocados in half, remove pits and scoop flesh into tomato mixture.
  • Add cilantro and continue mashing just until mixture is blended and avocados are mashed into ½" chunks.
  • Check for seasoning and add lime or salt if needed.
  • Serve immediately or cover tightly and refrigerate until ready to serve.
